Memorial Day is May 30 and is a day to remember those who have served our country and made the ultimate sacrifice for our freedom. The Memorial Day weekend is also the unofficial beginning of the summer season, and a time for enjoying picnics, the great outdoors and time with family and friends.
A great treat for your palate and tongue would be these wonderful flag fruit kabobs, which are not only refreshing and fun, but also healthy!
You will need:
- 2 lbs. of strawberries, with stems removed – sliced in half
- 4-5 bananas, cut into 1” slices (dip them in lemon juice to keep them from turning brown
- 1 pint of fresh blueberries
- 10 12” wooden skewers
Take five of the skewers and spear 10 blueberries on each. Then add a banana slice, strawberry, another banana slice and end with a strawberry to each of the five skewers – it looks best if all the strawberries point the same way. On each of the remaining 5 skewers, pierce 1 strawberry, followed by 1 banana slice until you have used 5 strawberry slices and 4 banana slices – be sure to end with a strawberry. Arrange the skewers on a serving tray or cookie sheet to make the flag design. You can refrigerate your flag until you are ready to serve!
And, just in case you can’t get any of the ingredients, here are some substitute ideas for you: For the red – if you can’t get strawberries, feel free to use watermelon, red raspberries, pitted cherries or seedless red grapes; for the blue – blackberries or black seedless grapes will do the trick; and for the white – marshmallows, square pieces of pound cake or peeled squares of apple (don’t forget to dip apples in lemon juice to prevent browning) will give you the right look!
